Armenian gata has different names in different regions of the country: gata, katah or kada. As a matter of fact, that’s a sweet dessert, the most popular Armenian pastry. It looks like pies with vanilla filling or puff pastry. Gata is easy to cook, but its taste is unusual and complex

Gata is very popular and respected in Armenian cuisine. High-skilled chefs and experienced housewives bake it for all holidays, even for weddings. On this day, the bride, alongside with her dowry, brings a large tray of baklava and necessarily 4-6 sheets of gata. When women are dressing the bride, they are treated with gata, beautifully wrapped in transparent paper. Gata was even noticed in the very popular movie “Prisoner of the Caucasus.” You see, now you have to try it :)

I don’t know about you but I adore strawberry desserts. As soon as the berry season starts, I take best advantage of it. Great ladies from Make My Cake Patisserie shared with me a recipe of perfect summer dessert. This dessert, strawberry galettes will almond cream, will for sure be a real gem of your summer dessert menu. And almond cream gives it a nice flavour and taste.

In some countries, you can now find gluten-free pizza bases in health shops or even supermarkets. They are great, but do you know what's even greater? Making your own gluten-free pizza from scratch. And it doesn't even take that long! This is a recipe for a vegetarian pizza using ground chickpea flour (also called garbanzo bean flour). Of course you can top your pizza with whatever you like, many different versions possible, so just go ahead and experiment! You can find the recipe and more photos here.

Chilled Zucchini Cappuccino is an elegant, vegan recipe, easy to make and very healthy. Zucchinis, or courgettes, have an extremely high water content – more than 95% – which makes them ideal ingredients for recipes on a hot summer day. They are rich in nutrients, while being very low in calories. Zucchinis are good sources of vitamin A and anti-oxidant vitamin C, as well as minerals like potassium, manganese, iron and zinc.

I just love soups in almost any variation. This one is very creamy, savoury and hearty. Enjoy! You can find the recipe here.

Parsnip swede and pepper soup 1

Ingredients (for 1-2 portions)
1/2 parsnip
1/4 swede
1/2 red pepper
1 shallot
1/2 vegetable stock cube
1/2 teaspoon turmeric
1/2 teaspoon paprika spice
1/2 teaspoon garlic powder (or 1 garlic clove)
3 tablespoons creme fraiche

Instructions
1) Boil ~750 ml of water (kettle or on the stove).

2) Peel parsnip, swede and onion. Chop them and the pepper in small pieces. Add to a pot, cover with the boiling water. Add vegetable stock, turmeric, paprika spice and garlic powder (or clove). Cook on medium heat for 20 minutes, occasionally stirring (you can leave the lid on, but be careful that it doesn't spill out of the pot!).

3) Add 2 tablespoons of creme fraiche. With an immersion mixer or blender, turn everything into a soup. Cook again for 1-2 minutes on low heat.

4) Garnish with some fresh or dried herbs and 1 tablespoon creme fraiche.

Perfect Peach and Pecan Birthday Cake [Jun. 11th, 2015|09:43 pm]

I made the Crust out of Pecan Nuts and Dates. I added a little bit of cinnamon and a pinch of salt to enhance the flavor and it turned out amazing. I had to discipline myself not to eat the crust mixture straight out the food processor. Next time I want to make some energy balls, I will use the same mixture, for sure.

For the Creamy part of the birthday cake, I wanted to make two creams: the first one would be made of soaked cashew nuts, bananas and vanilla, and the second one would need to have peaches in it, my favorite summer fruit in France.

Curry, I love curry! Again, this is one of the dishes I have made a lot while travelling. It's so variable, you can add whatever vegetables you like or can find in the local supermarket. It's also relatively quick and easy to make and of course very delicious! You can find the recipe and more photos here.

Cauliflower pumpkin curry 2

Ingredients
1/2 cauliflower head
1/4 Hokkaido pumpkin (referred to as "kabocha" in Japanese, the one with the dark green skin)
1 carrot
butter
1 teaspoon curry powder
~100 ml coconut milk

Instructions
1) Bring water to the boil in a pot (basically enough to cover your vegetables).

2) Remove skin from the pumpkin and carrot. Chop pumpkin, carrot and cauliflower into bite-sized pieces.

3) Add to the boiling water and cook until semi-soft (this sort of depends on how soft you want your vegetables to be).

4) Drain the vegetables. Melt butter in a pan and add the vegetables. Fry for a few minutes. Add curry powder and coconut milk. Fry for another few minutes.

5) Serve in a bowl and garnish with some herbs if you have.

Porridge - in basic words - is warm oatmeal and especially soothing for the soul on a cold winter's day morning. But to be honest, it is good no matter what the weather. I am not going to give quantities as it varies for people and pretty much depends on how much you like to eat or in fact, how much you love oatmeal (I can tell you that I probably have bigger portions of oatmeal than the average person). Banana maple syrup porridge 1

Ingredients
porridge oats
water (enough to cover your oats)
banana
milk of your choice
maple syrup

Instructions
Chop the banana in bite-sized pieces. Add porridge oats and banana to a pot. Cover with water. Cook on medium heat for 5 minutes (or longer if you like it very soft) until the mixture becomes creamy, stirring very often to prevent the porridge from burning. At the very end, add a little bit of milk. Transfer to a bowl and top with maple syrup. Enjoy while still warm.

When in Greece, don’t forget to stroll along the picturesque fresh produce market of your area. You’ll find an abundance of fresh seasonal fruits and vegetables, the basic ingredients to every Greek recipe. As I’m currently in my home country, visiting my family, I decided to make a vegan, gluten-free and grain-free veggie pie to savor the succulent summer vegetables.
