Too much garlic in my cottage cheese. :( [May. 4th, 2012|11:36 pm]
Veg Recipes

I was mixing garlic powder with cottage cheese to make a veggie dip and oops! Too much garlic! I'm out of cottage cheese so I can't dilute it and won't be able to go to the store for a few days. Any suggestions on what I could do? I'm on a low-fat diet right now so suggestions in that realm are preferable, but not required.

Cook some broccoli or cauliflower, or both, mash it, add some of the garlicky cheese, zap it in the microwave or put it on the stove for a few extra minutes to reduce/remove excess moisture... season with salt/pepper... then you have cheesy, garlicky mash, which should be highly delicious (I normally use fetta but I see no reason why you couldn't use a bit of cottage cheese).

I love this idea. I ended up throwing in some fresh parsley to offset the flavor and it worked wonders, but that doesn't mean I can't still do this!

You can also take cottage cheese, add breadcrumbs and egg/egg white, and fry it up (I use cooking spray) into patties.

Potato is good at soaking up flavors, as is tofu. Green peas or chickpeas would work, too. All do well pureed in dips, and leftovers could become patties for frying or be used to thicken soup.

Spinach goes well with garlic and in dips. Tomato, too, whether sauce or fresh. Mushrooms!

Salt is good at balancing out garlic.

I'm not sure how well it would work, but perhaps something citrus - orange, lime or lemon. Orange would probably be the best. I'm just not convinced it would react well with the cottage cheese on a chemical level. You could try it with a really small portion of it, though.
